Japanese Way of Life...
"IKIGAI"... this is the new book that I have come across on various book-shelves at homes and bookstores. It was hard to just ignore and I decided to give it a shot. It was time to read something interesting on self-development & self dwelling. But here is the thing, for me, the Japanese way of life also includes the Food of Japan. The cuisine is extremely versatile across courses that play with the mind of the person who eats it.
They believe in the 5th taste of food that is defined as Umami. It was discovered in the 1900s in dashi which was the astonishing factor for the person who tasted it. It was different than the four basic tastes. It was then identified that the umami flavour is concentrated in Seaweed which is used in Sushi and is liked by people all over the world. So, bottom line, Japanese are definitely going right with everything... including the longevity of their life.
Trying to be a part of the Japenese Food Culture, I thought it was time to make a Japanese cheesecake. One would wonder what is so different about this one but be rest assured that its the next best thing on this planet. The brown outside which gives it the nice crusty finish but the soft gooey centre, with the lightness that it feels like a cloud. The flavour is plain and simple vanilla but must I add that it is by far the best thing that the Western world has discovered from JAPAN. Having it with a perfect tart plum/strawberry sauce makes it exquisite.
But let me not give you any more details about this, but I do insist you to try it wherever you find it around you. You won't regret it...
May be this new Japanese dessert is the new challenge for the french patisserie and maybe the world.
Even if conventional way of baking is far from mastering for me .. I would still like to explore the other desserts from different cuisines and maybe make my own Japanese Cheesecakes.
Go ahead explore the unexplored. Read up on the Japanese way of life and try imbibing some part of it in your food.
